My Favourite Marinade – #NoNakedChicken!

As a parent I want the best for my kids, and that includes wholesome food. With all of the stuff I read about hormone-injected meat and pesticide-ridden produce, I’ve had to do a lot of research to determine what’s best for my family, while staying within my budget.

As I’ve written about in a previous post, I use the Dirty Dozen™ list to help me determine what produce I should buy organic. And, when it comes to chicken (a favourite in my house), I used to buy organic or hormone-free whenever possible. But, if you’ve ever purchased organic meat, you know that it’s very expensive. So imagine my delight when I found out that absolutely NO hormones or steroids are given to chickens raised in Canada! In fact, the use of hormones and steroids in chicken feed has been banned since the 1960s. Now I feel even better about serving my family Canadian chicken – it’s one of my favourite go-to meals that I know they’ll eat… and that’s saying a lot with little ones that can be picky!

One of the best-loved ways to cook chicken is on the barbecue… it’s quick, easy and a crowd-pleaser!  And, in the spirit of the #NoNakedChicken campaign, I thought I’d share one of my favourite marinades with you!

  • 1/2 cup vegetable or peanut oil
  • 1/2 cup ketchup
  • 1/4 cup red wine
  • 1 tbsp. chopped parsley
  • 3 tbsp. balsamic vinegar (may use wine vinegar as substitute)
  • 1 tsp. garlic powder OR 4 cloves garlic
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
What I love most about marinades is that you can tweak them to suit your own taste. Want a hint of sweetness? Add a squirt of honey! Want a bit of bite? Add some tabasco sauce! And, while I adore grilled chicken, it’s just as easy to toss it in a pan and bake it in the oven in the colder months when my husband might not want to shovel a path to our barbecue!
Chicken is so versatile. During hot summer months, sliced chicken over a green salad with avocado makes a light, refreshing meal; on a chilly evening, chicken corn chowder soup – with yummy homemade bread –  really hits the spot. The possibilities are endless!
